Peas! What in the world should I do with all the peas?
Let me explain…
Every once in a while O’s mom sends up some things that she buys, fruits or vegetables, or some things she makes, mini-meatballs or tortellini and various other goodies. Of course all are very welcome and we appreciate her generosity. (I especially like it when she sends up stuffed eggplant – yummm!)
But, this last time she gave us a 2.5 kilo bag of frozen peas. Now, for those who don’t know the conversion, a 2.5 kilo bag equals 5 1/2 pounds of peas. I think you’ll agree, that that’s a LOT of peas.
Now, I like peas, especially fresh peas, but I’m trying to figure out how to use all these frozen ones. Especially since she told me the other day that she has more in her freezer.
So, I’ve been using them in various recipes, but I’m now at a loss as to what else I can do with them – we can’t (or don’t want to) eat the same things over and over again.
Any pea recipes are welcome…..

This month’s copy of “Sale e Pepe” magazine has an article with recipes for peas and fave. Some look very good, some are things everybody has already had. There are also some nice recipes for roast meats cooked with vegetables and stuffings, so Michelle’s article must have been really powerful!
There are two different home made breads, too, which are really rare in Italian magazines.

I also will add that I have pea soup all the time. Cook until just tender in brodo. Salt and pepper to taste, blend or food mill to puree. Sprinkle some formaggio on top, or stir in some Total Greek yoghurt.

I never thought to make pea soup with frozen peas, I usually make it with the dried split peas. That’s a great idea though, I’ll have to try it. I’ll check out Sale e Pepe too. I haven’t seen that magazine before.

Cheesy peas are a favorite in my house, goes great with pasta or rice. I know you can invent a few, I’ll start you of with some ideas, Zucchini, pea bread, Meatpea loaf, Frozen pea pate’. If nothing else they sound like cool dishes.

I buy a bag of small frozen whole mushrooms. Don’t know what they’re called, but they are about 1/2 inch tall. I saute them in olive oil for a while (10 minutes?) then I add a couple of handfuls or so of frozen peas. Stir. Add a little more oil if needed
and salt. Stir. Saute for a while…keep tasting. It probably takes about 20 minutes I’m guessing. When both vegetables are as you like them, it’s done. I REALLY like this side dish!

OK, those mushrooms are probably a little bigger than 1/2 inch tall…maybe 3/4 inch! I guess it would work with chopped fresh mushrooms too. Mushrooms and peas are a great combination.
